Gnocchi in creamy pesto!

This one is an absolute hit (also my fav kinda pasta) and I have already shared the gnocchi from scratch recipe. In case you missed it, do check out

I would love to share my almond pesto recipe with y’all for this post as a lot of us asked for it!

Method:

1. Soak about 12-14 almonds in warm water for about 30 mins to get a great nut-creamy balance.

2. In a grinder, grind 1 c basil leaves, soaked almonds, 6 garlic cloves, 2 tbsp olive oil, 1 tsp salt and 1 tbsp lemon juice.
Adjust consistency by adding about a quarter cup of water.

3. Store in an airtight container. Can be reused for about 20-22 days!
